Three Sisters Salsa

Serves: 16 for snack or as accompaniment to a main course
1 (15-ounce) can black beans, drained
2 ears fresh sweet corn on the cob, husked and kernels removed from cob
4 tomatoes, small dice
1 zucchini, small dice
1 small red onion, finely chopped
½ large bunch fresh cilantro, roughly chopped
Juice of 2 limes
2 tablespoons extra virgin olive oil
1 teaspoon chili powder
Salt and freshly ground pepper
- Combine all ingredients together in a large bowl and adjust seasonings to taste.
- Serve salsa as an accompaniment to a main course, such as vegetable quesadillas, or as a snack with homemade baked tortilla chips.
