Turkey Bean Tacos

Ingredients
2 (15 oz.) can pinto beans, rinsed and drained
3 tablespoons olive oil
½ cup sofrito (see recipe)
1 large onion, finely chopped
2 pounds lean ground turkey (90% lean recommended)
1 tablespoon homemade adobo seasoning (see recipe)
½ teaspoon chili powder
Serve with
15-20 (6 to 8 inch) whole wheat flour tortillas (1 tortilla per child)
1½ cups shredded Cheddar cheese
4 cups thinly sliced or finely chopped romaine lettuce (about ½ small head of lettuce)
Fresh Avocado-Tomato Salsa (see recipe)
Directions
- In a medium bowl mash the beans with a potato masher or fork and set aside. In a large sauté pan, heat the olive oil over medium heat, add the sofrito and cook it for 2 minutes. Add the onion and continue to cook until the onion is translucent, about 5 to 6 minutes.
- Add the turkey, mashed beans, homemade adobo seasoning and chili powder mix well and add ½ cup water. Cook uncovered, stirring occasionally, until turkey is browned, about 20 to 25 minutes.
- Serve turkey, tortillas, cheese, lettuce and salsa in separate bowls. Teachers or cooks demonstrate to children how to build a taco: children put a tortilla on their plate, add a little of each ingredient to the tortilla, and then fold the tortilla in half to close in the fillings.
