Turkey Bean Tacos

Makes about 20 servings for 3- to 5-year-olds
Makes about 15 servings for 6 years old and up

This recipe fulfils the total Meat component, the total Grains/Bread component, and one half of the Vegetable/Fruit components.

Ingredients

2 (15 oz.) can pinto beans, rinsed and drained
3 tablespoons olive oil
½ cup sofrito (see recipe)
1 large onion, finely chopped
2 pounds lean ground turkey (90% lean recommended)
1 tablespoon homemade adobo seasoning (see recipe)
½ teaspoon chili powder

Serve with

15-20 (6 to 8 inch) whole wheat flour tortillas (1 tortilla per child)
1½ cups shredded Cheddar cheese
4 cups thinly sliced or finely chopped romaine lettuce (about ½ small head of lettuce)
Fresh Avocado-Tomato Salsa (see recipe)

Directions

  1. In a medium bowl mash the beans with a potato masher or fork and set aside. In a large sauté pan, heat the olive oil over medium heat, add the sofrito and cook it for 2 minutes. Add the onion and continue to cook until the onion is translucent, about 5 to 6 minutes.
  2. Add the turkey, mashed beans, homemade adobo seasoning and chili powder mix well and add ½ cup water. Cook uncovered, stirring occasionally, until turkey is browned, about 20 to 25 minutes.
  3. Serve turkey, tortillas, cheese, lettuce and salsa in separate bowls. Teachers or cooks demonstrate to children how to build a taco: children put a tortilla on their plate, add a little of each ingredient to the tortilla, and then fold the tortilla in half to close in the fillings.
