Honey Roasted Carrots
Yields: about 5 cups
Makes about 20 (1/4 cup) servings for 3- to 5-year-olds
Makes about 10 (1/2 cup) servings for 6 years old and up

2½ pounds fresh carrots, cut into ½-inch rounds
2 tablespoons olive oil
2 tablespoons honey
salt and ground black pepper
- Preheat oven to 400o F.
- In a large bowl, whisk together the olive oil, honey, salt and ground black pepper. Add the carrots to the bowl and toss until they are well coated.
- Place the carrots in a single layer on a rimmed baking sheet. Bake for 25-30 minutes, or until carrots are golden brown and tender but still have some firmness. Serve warm.
Note: This recipe works best with fresh, not frozen, carrots.
