Honey Roasted Carrots

Yields: about 5 cups

Makes about 20 (1/4 cup) servings for 3- to 5-year-olds
Makes about 10 (1/2 cup) servings for 6 years old and up

2½ pounds fresh carrots, cut into ½-inch rounds
2 tablespoons olive oil
2 tablespoons honey
salt and ground black pepper


  1. Preheat oven to 400o F.
  2. In a large bowl, whisk together the olive oil, honey, salt and ground black pepper. Add the carrots to the bowl and toss until they are well coated.
  3. Place the carrots in a single layer on a rimmed baking sheet. Bake for 25-30 minutes, or until carrots are golden brown and tender but still have some firmness. Serve warm.

Note: This recipe works best with fresh, not frozen, carrots.
