1 1/3 cups (about ½ pound) fine yellow cornmeal
½ teaspoon salt
3 cups water
10½ cups milk
1/3 cup light brown sugar
1 cinnamon stick
1 (2 –inch) strip of orange rind (just the orange part, not the white pith)
1 teaspoon nutmeg
½ teaspoon ground cloves
2½ teaspoons vanilla extract
- In a medium bowl combine the cornmeal, salt and water and mix until well incorporated.
- In a stockpot combine the milk, light brown sugar, cinnamon stick and orange strip. Bring it to a boil over medium-high heat. Stir in the cornmeal mixture and cook for 8 to 10 minutes, stirring frequently with a whisk.
- Add the nutmeg, ground cloves and vanilla extract and mix well. Serve hot.
